15-Minute Shrimp Fried Rice

Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 4 cups cooked cold rice
  • 2 tablespoons vegetable oil
  • 3 eggs lightly beaten
  • 1 cup frozen peas and carrots
  • 3 green onions sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1/2 teaspoon black pepper

Method
 

  1. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook for 2 to 3 minutes per side until pink and cooked through.
  3. Remove the shrimp and set aside.
  4. Add the remaining oil to the pan.
  5. Pour in the beaten eggs and scramble until just cooked.
  6. Add the garlic and peas and carrots.
  7. Cook for 2 minutes.
  8. Add the cold rice and break up any clumps.
  9. Stir-fry for 3 to 4 minutes.
  10. Pour in the soy sauce and sesame oil.
  11. Return the shrimp to the pan.
  12. Add the green onions and black pepper.
  13. Toss everything together until heated through.
  14. Serve immediately.

Notes

  • Cold day-old rice works best.
  • Do not overcook the shrimp.
  • Use a large skillet or wok for even cooking.
  • Adjust soy sauce to taste.
  • Frozen vegetables work perfectly.
  • High heat creates the best fried rice texture.
