Ingredients

  • 4 cod fillets about 6 oz each
  • 3 tablespoons unsalted butter
  • 4 garlic cloves minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley
  • Lemon wedges for serving

Method

  1. Pat the cod fillets dry with paper towels and season both sides with paprika, garlic powder, onion powder, salt, and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the cod fillets and cook for 3 to 4 minutes on the first side until lightly golden.
  4. Carefully flip the fillets and cook for another 3 minutes.
  5. Reduce the heat to medium.
  6. Add the butter and minced garlic to the skillet. Stir until the butter melts and the garlic becomes fragrant, about 1 minute.
  7. Stir in the lemon juice and lemon zest.
  8. Spoon the garlic butter sauce over the cod continuously for 1 to 2 minutes until the fish flakes easily with a fork.
  9. Transfer the cod to serving plates.
  10. Garnish with fresh parsley and serve with lemon wedges.

Notes

  • Pat the fish dry to help it brown nicely.
  • Avoid overcooking, as cod becomes dry quickly.
  • Fresh garlic gives the best flavor.
  • Use unsalted butter to better control the seasoning.
  • The fish is done when it flakes easily with a fork.
