Ingredients
  

  • For the Shrimp
  • 1 pound large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • For the Slaw
  • 2 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Pinch of salt
  • For Serving
  • 8 small flour or corn tortillas
  • 1 cup pico de gallo
  • ¼ cup diced red onion
  • Fresh cilantro
  • Lime wedges
  • Creamy Taco Sauce
  • ½ cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce optional
  • ½ teaspoon garlic powder
  • Pinch of salt

Method
 

  1. In a small bowl, combine the chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper.
  2. Pat the shrimp dry, drizzle with olive oil, and toss with the seasoning mixture until evenly coated.
  3. Heat a large skillet over medium-high heat. Cook the shrimp for 2 to 3 minutes per side until pink and cooked through.
  4. Meanwhile, combine the green cabbage, purple cabbage, lime juice, olive oil, and salt in a bowl. Toss well.
  5. In another small bowl, whisk together the sour cream, mayonnaise, lime juice, hot sauce, garlic powder, and salt until smooth.
  6. Warm the tortillas in a dry skillet or microwave.
  7. Fill each tortilla with cabbage slaw, cooked shrimp, pico de gallo, diced red onion, and fresh cilantro.
  8. Drizzle generously with the creamy taco sauce and serve immediately with lime wedges.

Notes

  • Do not overcook the shrimp or they will become rubbery.
  • Fresh lime juice gives the best flavor.
  • Warm tortillas before serving to prevent cracking.
  • Use medium or large shrimp for the best texture.
  • Double the sauce if you like extra drizzle.
