Ingredients

  • 4 salmon fillets about 6 oz each
  • 2 tablespoons white miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon grated fresh ginger
  • 2 garlic cloves minced
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh chives or green onions
  • Lemon wedges for serving

Method

  1. Pat the salmon fillets dry with paper towels.
  2. In a small bowl, whisk together the miso paste, soy sauce, honey, mirin, sesame oil, lemon juice, grated ginger, and minced garlic until smooth.
  3. Brush the glaze generously over both sides of the salmon.
  4. Heat the olive oil in a large nonstick skillet over medium-high heat.
  5. Place the salmon skin-side down (if using skin-on fillets) and cook for about 4 minutes.
  6. Carefully flip the salmon and cook for another 3 to 4 minutes, brushing with the remaining glaze as it cooks.
  7. Cook until the salmon flakes easily with a fork and the glaze is lightly caramelized.
  8. Transfer to serving plates.
  9. Garnish with chopped chives or green onions and serve with fresh lemon wedges.

Notes

  • White miso has a mild, slightly sweet flavor that's perfect for this recipe.
  • Pat the salmon dry to help the glaze stick.
  • Avoid overcooking to keep the salmon moist.
  • Use a nonstick skillet for easier flipping.
  • The glaze will thicken as it cooks.
